Although salads are a great choice for a healthy meal, using the same boring ingredients over and over can quickly become a habit. Get out of your salad rut with this nutritious and unexpected broccoli and bacon salad!
The broccoli and almonds add crunch, while the bite of the onion and sweetness of the dressing provide an enticing juxtaposition. This dish is perfect to bring to work or school for lunch. The hearty broccoli doesn’t wilt like lettuce, so come lunch time you have a fresh and balanced lunch. This is quickly becoming a favorite in the Gourmet Orchards kitchen! 2 heads fresh broccoli
1 red onion
1/2 pound bacon
3/4 cup raisins
3/4 cup sliced almonds
1 cup mayonnaise
1/2 cup white sugar
2 tablespoons white wine vinegar
1. Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
2. Cut the broccoli into bite-size pieces and slice the onion into thin, bite-size sections. Combine with the bacon, raisins, and almonds in a large bowl.
3. To prepare the dressing, blend the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and enjoy.
